Led by chef Julius Nuiten.
Julius Nuiten earned a Michelin star earlier in his career. Trained in fine dining and known for precise, à la minute cooking, he brings that same precision to Le Souterrain: luxe ingredients, clean flavours and a playful, modern hand.
Signature dishes.
Think Gillardeau oysters with smoked O-toro, caviar and ponzu, crispy scallop with XO sauce, sesame and scallion, steak tartare with miso and sesame, coconut and Thai basil bisque with kaffir lime, shortrib with red wine jus and soy-tahini glaze, wild sea trout with yuzu, and Wagyu A5 with ponzu jus. Vegetarian dishes throughout, plus caviar and truffle to add.
